Ten Minute Caramel Candies

Make delicious chewy melt-in-your mouth caramels in your microwave in less than 10 minutes!


Ingredients:

  • 1 cup butter

  • 1 cup light corn syrup

  • 1 cup light brown sugar

  • 1 cup of white sugar

  • 1 cup sweetened condensed milk

  • 2 teaspoons vanilla

  • Sea Salt (opt.)











Instructions:

  1. Line an 8 inch square pan or dish with parchment paper.

  2. Melt the butter in a large microwavable bowl until just melted.

  3. Stir in the corn syrup, both sugars, and the sweetened condensed milk until the sugars are dissolved.

  4. Microwave on high for 3 minutes and 5 seconds.*

  5. Remove from the microwave and stir, scraping down the sides of the bowl.

  6. Return to the microwave and cook on high for 3 minutes and 5 seconds again.

  7. Remove and stir in the vanilla well.

  8. Pour immediately into the parchment lined dish.

  9. Allow it to sit for several hours until fully cooled and set. Sprinkle sea salt on top if you would like salted caramels. (opt.)


Tip: Turn it out of the dish when fully set and cut into narrow strips. Then cut strips into pieces and wrap with small pieces of parchment paper. This takes a little while, but it preps your candies for easy eating over the next few days, if they last that long. Depending on how you cut your caramels, this makes 80-100 pieces easily.


* My microwave is 1100 watts. For lower wattage ovens, you may want to microwave 3 minutes and 10 seconds each time instead. The longer you heat it, the harder the caramels will be. *
