BLT Pasta Salad


BLT Pasta Salad Recipe

It's so good, that's all you need to know. No life story, no scrolling for ages to find the recipe. Just make it and eat it. AND you can even use ranch from a bottle, honey, that's just fine! :)

Ingredients:

  • ½ to 1 pound bacon (cooked and coarsely crumbled)

  • 2 cups chopped tomato

  • 3 cups chopped romaine lettuce

  • 1 lb bow-tie pasta

  • 2 cups sharp shredded cheddar cheese

  • Ranch dressing (bottle or homemade is fine)

  • Salt & pepper, to taste

  • 2 Tbs. parsley

Instructions:

  1. Cook and crumble the bacon.

  2. Chop tomatoes and lettuce.

  3. Cook the pasta in heavily salted water.

  4. Drain pasta while rinsing with cold water to bring the temperature down.

  5. Add bacon, lettuce, tomatoes, parsley, and cheese to the pasta.

  6. Fold in ranch dressing. Use enough to coat well. It will be absorbed so don’t be stingy.

  7. Add salt & pepper to taste.

Toss Ins:

Other ingredients you might like to toss in could include cucumber, scallions, & avocado.

Tips:

If you think you may have leftovers and would like to save and eat this later too, I would recommend keeping the lettuce and bacon out and tossing them into the portion you plan to initially serve. Save the rest to toss in the next time you take some out.

As leftovers, the bacon will get rubbery and the lettuce will get soft and that just ruins it for me. But when they are crispy and fresh added to the rest of this salad, they are the best!!

So, mix it all for one dinner, or half the recipe, mix it all for the first half, and hold out the lettuce and bacon for the second half until you serve it.
