Ingredients
4 Cups of Old Fashioned Oats (NOT quick oats)
1 to 1.5 Cups of chopped almonds (I sometimes use 1/2 pecans and 1/2 almonds)
1/2 Cup Packed Light Brown Sugar
1/2 Teaspoon of salt
1 Teaspoon Ground Cinnamon
1/4 Cup Vegetable Oil (can substitute melted coconut oil)
1/4 Cup Honey
2 Tablespoons Maple Syrup
2 Teaspoons Vanilla
1.5 Cups of Dried Fruit (I like dried cherries, blueberries and cranberries)
Instructions
Preheat Oven to 300 degrees
Lightly oil a 15 x 10 inch baking pan
Mix oats, nuts, brown sugar, salt and cinnamon in a large bowl.
In a sauce pan warm oil, honey, and maple syrup. (Med-low heat)
Whisk in the vanilla just before taking off the heat.
Pour honey mixture over the oat mixture and stir until everything has been coated.
Pour the granola mixture into the baking sheet and spread out evenly.
Bake at 300 for 40 minutes, STIRRING AND MIXING EVERY 10 MINUTES.
If you don't stir it up and move it around every 10 minutes it will burn.
Let it cool completely, then stir in the dried fruit and store in an air tight container.
Container storage is 1 week, but we eat ours in three days. You can freeze it for 3 months. Tastes great over yogurt, just as a snack or as a cereal.
